ONE STEP POUND CAKE

2 ¼ unsifted all-purpose flour

2 cups sugar

1 tsp grated lemon, lime or orange rind

½ tsp salt

½ tsp baking soda

1 cup sour cream

1 cup butter, softened

1 tsp vanilla

3 eggs

 

  1. Preheat oven to 325 F. Generously grease and flour 12 cup fluted or plain tube pan.
  2. In a large bowl, blend all ingredients at low speed until moistened.
  3. Beat batter three minutes at medium speed. Pour batter into prepared pan.
  4. Bake for 55 to 60 minutes or until toothpick inserted into center comes out clean.
  5. Cool to lukewarm. Invert onto serving plate. Cool completely. Glaze if desired while still warm or cool completely and sprinkle with powdered sugar.

 

Makes one 10 inch ring cake.

 

GLAZE

 

1 cup powdered sugar

1-2 Tbs lemon juice
