Jam-Filled Muffins

Dry Ingredients:
1 1/2 cups flour
1/4 cup white sugar
2 tsp.baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Wet Ingredients:
1/4 cup butter, melted
1 cup plain yogurt
1/4 cup milk
1 egg
1/2 tsp vanilla

1.) Preheat the oven to 375°.
2.) Blend together dry ingredients in a large bowl.
3.) Mix wet ingredients in a separate bowl.
4.) Add wet ingredients to dry.
5.) Spoon half of the batter into baking cups.Place one tsp. jam in each cup then top with remaining batter.
6.) Bake 15-20 minutes.

Alternate recipe:
Generously butter mini muffin tins, fill 3/4 full and bake for about 10 minutes or until lightly golden. Carefully remove from tin and roll in melted butter then cinnamon sugar while still warm.
